Extra sweet Valentine’s day with Leche Flan

While others consider it as a special day, for us, it is an ordinary day. I reminded Ace the other day that Valentine’s day is one day to go and he said, “So what? We (are supposed to) celebrate it everyday.” Huh? That’s why, I don’t receive flowers or any gift during February 14. He just surprises me anyday of the year. I’ve been crying for that during the first couple of years of our relationship but I learned to accept it. Anyway, just to make the day something “special” in my own way, I made my own version of Leche Flan (one of our favorites!). We have been craving for this before but I wasn’t able to cook because our flan molder is missing.
Here’s my version of the recipe….I finally got the right mixture after trial and error (years back)
What you need:
10 egg yolks
1 can condensed milk
1 small can evaporated milk
How to do it:
1) In a bowl, mix well all ingredients (I usually use manual mixer but you can also use fork)
2) Once done, place in a flan molder (I used 2 round improvised molder with this….the stainless food keepers of my mother-in-law)
3) Steam for 20-30 minutes or until cooked (check if mixture solidified)
4) Remove from heat and let it stand for a couple of hours before putting in the fridge.
Ace put the Leche Flan in the freezer (he likes it more when frozen).
Note: You can put small amount of caramelized brown sugar in the molder before pouring the mixture in it. That makes the golden brown color of the flan and pour into it the remaining syrup when removed from the molder.

hmmm…i’m kinda in the same predicament with my Christopher. i asked him about his plans this valentines day, i was thinknig that he might be taking out his children to a date -he is in UK i’m in Manila, and he said without batting an eyelash, just to send me an ecard and that’s all. oh why not? LOL. one of his insensitivities.

Hahaha, yeah, maybe. I hated everytime that he’s always busy and even not intentionally, he’s snobbish or insensitive
